Daves Favorite Curry Powder seeds from 22 green cardamom pods 12cm of cinnamon stick broken into little pieces 11 dried curry leaves 6 TBS corriander seeds 6 dried red chilies 5 bay leaves 3 1/2 TBS ground turmeric 3 TBS cumin seeds 2 1/2 TBS fennel seeds 2 TBS black mustard seeds 1 TBS fenugreek seeds 1 tsp black peppercorns 1/2 tsp whole cloves grated fresh nutmeg, about 1/4th a tsp. Put all of this in the biggest/heaviest DRY frying pan you own (NO OIL!). Over medium heat roast all of these spices stirring CONSTANTLY so they do not burn. After about 5 minutes they should have darkened a shade and be very fragrant. If they burn throw them out and start over. If you are paranoid cook them over medium-low heat and cook them a few more minutes. Transfer these to a spice grinder (a CLEAN coffee grinder will also work very well). Grind them to a fine powder. Store in an airtight jar. This makes a little more then a cup of curry powder, which should last for quite a while.
