Quinoa "cous cous" with cranberries and walnuts 1 c. cooked quinoa 1/2 c. dried cranberries 1/2 c. chopped walnuts 2 tbs honey 1/2 tsp cinnamon pinch salt Make 1 cup of cooked whole grain quinoa. Make sure you rinse it under water before cooking it or it will have a bitter taste. To the quinoa add all remaining ingrediants and mix well. Stuff this into pre baked acorn squash (or any other type of squash). Or serve it along side boiled/baked/broiled/steamed sweet potatoes or yams. The quinoa will compliment any other vegetarian source of protein you eat.
